When I see "Healthy Cookie Dough" on pinterest... naturally I'm intrigued.
As you can see, they have chocolate chips so it's not all healthy but it's certainly deliciously better for you than the flour, sugar and raw egg in regular cookie dough!
My sister Lizzy came over and we whipped these up!
Here's what you need.
Ingredients
2/3 cup raw almonds
2/3 cup raw walnuts
2/3 cup rolled oats
1/4 tsp. cinnamon
1/8 tsp. salt
1/4 cup honey
2 tsp. vanilla extract
1/4 cup chocolate chips

Directions
In a food processor, add the almonds, walnuts, oats, cinnamon, and salt. Process until it's a fine meal. (I just used a hand blender and it worked fine!)

Isn't my Valentine's Day bowl cute? Figured it was time to give it it's moment to shine.
Add the honey and vanilla, process again.
Transfer to a small bowl and add the chocolate chips, folding to combine.
Roll into balls. (You can wet your hands if they aren't rolling easily.)
Store them in the freezer if you want them to be hard, and leave them in the fridge if you want them to be softer and more crumbly.

Verdict from Lizzy and I: They aren't as sugary as regular cookie dough, but the consistency is pretty much the same! They are the perfect little snack for when you just want a taste of something sweet. (I have a sweet tooth issue.)
(We also decided if we weren't trying to be as healthy, you could dip them like cake balls and have a cake ball alternative!! Shh!)

Some people like to add coconut or swap out the chocolate chips for something healthier, like dried cranberries. You can also substitute the honey for agave nectar.

These look delicious! It would be awesome to try them out with dark chocolate covered espresso beans from Trader Joe's in place of the chocolate chips. Yum!
