Hidden Kiss Cookies

Today I am serving up one of my first recipe blog posts in a looong time! I’m not usually a big baker, but with the holidays approaching, I wanted to try some new festive recipes.

The lovely Amruta of Kale and Brownies and I decided to team up for an afternoon in the kitchen. Amruta and I have been friends for several years, but this is our first time teaming up for a blog post! As you can probably tell by the title of her blog, she shares nutritious recipes, and focuses mainly on low carb, paleo, grain/gluten free, etc. But occasionally you might find her whipping up some brownies, or truffles like in her post today!

Kiss Cookies

I am baking these fabulous hidden kiss cookies. The recipe is originally from the December Southern Living but I altered it a bit and added a few notes.

Hidden Kiss Cookies

What you need:

2 ¼ cups of all-purpose flour

1 cup sliced almonds

2/3 cup of powdered sugar

½ tsp. table salt

1 ¼ cups of butter, softened

1 tsp. vanilla extract

¼ tsp. almond extract

42 chocolate kisses*

Instructions:

  • Take the butter out of fridge to soften ASAP. Preheat oven to 350 degrees. Pulse first 4 ingredients in a food processor until almonds are finely ground.  If you don’t have a food processor, just use a blender to ground up the almonds. (That’s what I did and it worked fine.)
  • Beat butter together with vanilla extract and almond extract at medium-high speed with an electric mixer about 30 seconds or until creamy. Add flour mixture in 2 batches, beating until blended after each addition. Turn dough out onto a lightly floured surface and kneed 4 to 5 times.

Kneading Dough

  • With half of the dough, drop heaping teaspoons 1 inch apart on 2 parchment paper – lined baking sheets. Press 1 chocolate kiss into center of each cookie. Use the remaining dough to cover each chocolate kiss with another heaping teaspoon full of dough. Round out the overall cookie by rolling it around in your hands to fully seal the dough around the chocolate kiss.

  • Bake at 350 degrees for 15 minutes placing 2 baking sheet on middle oven rack and 1 sheet on lower overn rack. Rotate pans front to back and top to bottom for another 3-4 minutes or until lightly golden brown.

  • Let cool on a cooling rack for 3-5 minutes. Sprinkle the remaining powdered sugar on the cookies. You don’t have to use a sifter but if you have one I would use it to make the sugar sprinkle on more evenly.  I hate washing my sifter so I actually used a wire colander to sprinkle it on evenly.
  • For fun: since Amruta was using fun toppings for her recipe on this day, I actually borrowed some of her peppermint shavings to make these cookies a little more holiday! I only did it on a few of the cookies because I wanted to make sure the peppermint tasted ok with the other flavors of the cookie. I ended up loving the peppermint ones the best! Plus, they added a bit of pretty red color!

These are the perfect cookies to leave out for Santa! Or if you’re like me, I ended up having one at night with milk, and sometimes in the morning with my coffee or tea.  Whoops! (I did share them at a family gathering of course but hey, we had leftovers.)

*I got half kisses and half hugs which are partially white chocolate. I recommend sticking with regular kisses just because the white chocolate ones aren’t as visible when you bite into them!
